
Jumbo Lump Crab Cakes/Burgers

Ingredients
2 lbs Jumbo Lump Crab Meat
1 - 6pk Brioche Buns or Brioche Slider Buns (lightly toasted)
16 - 20 Kellogg Club Crackers, crushed
1/3 c Panko bread crumbs
Roma Tomatoes
Butter Lettuce
Mayonnaise Mix
1/2 c + 2 tbsp Mayonnaise
1 + 1/2 tsp Worcestershire Sauce
2 Large Eggs, beaten
3 tbsp Parsley, finely chopped
1 tbsp Celery, finely chopped *optional*
1 tbsp Dijon Mustard
Lemon Juice from a lemon wedge
a dash of hot sauce
1 + 1/2 tsp Dash of Dacy Blackish
1 tsp Dash of Dacy Zesty Lemon Pepper
1/2 tsp Dash of Dacy Salt & Pepper Blend
1/2 tsp Dash of Dacy Garlicky Onion Herb
Seasoned Melted Butter
4 tbsp Butter, Melted
1/8 tsp Dash of Dacy Blackish
1/8 tsp Dash of Dacy Zesty Lemon Pepper
1/8 tsp Dash of Dacy Salt & Pepper Blend
1/8 tsp Dash of Dacy Garlicky Onion Herb
Tartar Sauce
1 cup Mayonnaise
2 tbsp Sweet Relish
1 tbsp Red Onion, finely chopped
1/2 tsp Dash of Dacy Blackish
1/2 tsp Dash of Dacy Salt & Pepper Blend
1/2 tsp Lemon Zest
Directions
- Make the tartar sauce first. In a small bowl, whisk together the mayo, relish, red onion, Dash seasonings and lemon zest. Place in fridge.
- In a large bowl, make the mayonnaise mixture. Whisk together Mayo, Worcestershire sauce, eggs, mustard parsley, lemon juice, Dash of Dacy seasonings and hot sauce until smooth. Set aside.
- Using your hands, crush club crackers.
- Mix club crackers and panko bread crumbs together. Set aside.
- Gently break a part 1lb of the crab meat (do not shred the meat too much) keep the other pound of crab meat lump.
- Add mayo mix and cracker panko mix to the bowl of crab. Keeping the crab meat lump, gently mix all ingredients together until combined.
- Line baking sheet with parchment. Set aside.
- Using a 1cup measuring tool, form crab cake patties, round them off with your hands, place on baking sheet.
- Place parchment paper over crab cakes (don’t wrap tightly) place sheet pan in fridge for 45 minutes.
- Preheat oven to 350 degrees.
- Make seasoned butter. Melt butter in microwave then add Dash seasonings. Mix all ingredients together.
- Remove crab cakes from fridge. Add 1/2 tsp of seasoned melted butter to the top of each large crab cake (If making smaller ones 1/4 tsp will do.) Place in oven.
- Bake for 25-35 mins or until golden brown.
- Remove from oven, add a drizzle of seasoned butter mix to each crab cake.
- Transfer the crab cakes to plates and serve with tarter sauce or assemble crab cake burger.
- Light toast brioche buns.
- On the bottom of the bun lightly spread tarter sauce. Stack burger with butter lettuce, slices of tomatoes, crab cake, a dollop of tarter sauce and then the top bun.
Bite into the best crab cake/crab cake burger and enjoy the flavors!
