Sweet Chilli Cornish Hens

- Ingredients
  • 4 Cornish Hens
  • 2 tbsp Dash of Dacy Sweet Smokey Rub + additional to sprinkle on pepper and onion
  • 1/3 cup Sweet Chilli Sauce
  • 2 tsp Dark Soy Sauce
  • 1 Red Bell Pepper, chopped
  • 1 Red Onion, chopped
  • Sweet Smokey Shallot Butter, optional
  • 1 tsp of Extra Virgin Olive Oil
- Directions + Tips
  1. Clean and wash hens. **Brine hens for 8-12 hours using Dash of Dacy Poultry Brine (refer to my IG caption for more details - this step is optional but your hens will taste ten times better)**
  2. Pat dry hens, and set aside.
  3. In a bowl, mix Dash Sweet Smokey, Sweet Chilli Sauce and Soy Sauce.
  4. Pour sweet sauce mix all over hens. Make sure the hens are heavily coated in the sauce.
  5. Stuff cavity of hen with pepper and onion mix and Sweet Smokey Shallot Butter
  6. Truss the hen to ensure that everything cooks evenly. Use bakers twine to tie the legs together and tuck the wings to prevent burning (or cover the tip of the wings with foil).
  7. Drizzle Olive Oil on top of chicken.
  8. Bake in the oven, uncovered, for about 50-60 minutes at 375 °F or until thermometer read 165-175 °F. Baste hen every 20 minutes with the juices from pan. Rotating the pan halfway through.
